- 1 pound carrots
- 1 tbsp olive oil
- 1/2 tsp salt to taste
- 1/4 tsp pepper
Preheat the oven to 400F. Line a baking sheet with parchment paper.
Trim the carrots and cut into 2-inch long sticks.
On a baking sheet, toss the carrots with the oil, salt and pepper to coat.
Roasat for 30 to 40 minutes, until soft all the way through.
